Table 3 Shows the changes in the chemical composition of mangoes after eight days of storage. An overall comparison between chitosan treatments showed that there was no significant difference between chitosan concentrations of 1% and 1.5%. Application of chitosan exhibited a beneficial effect on the contents of TA, TSS, pH and ascorbic acid. This could be due to low respiration of coated fruit. The presence of the enzyme system did not influence chemical composition changes in the fruit.
