7. Be careful when recording temperatures that you record the correct temperature. Take your time as it is extremely important that they are recorded correctly. If the temperature is not correct then the food must not be served. If you are unaware of the correct temperatures they are on the bottom of each page.
8. Fridge and freezer temperatures are just as important. We had a freezer temperature recorded at 20. The minus was missing at the front. Even though this may seem like a small mistake it is very serious as it would have meant we had to throw out all the food from the freezer.
9. We need to make sure that all food that we serve our residents come from an approved supplier.
10. No rubber bands are to be used in the kitchen or Jaca to seal open foods. If you see any remove them straight away.
11. Worcester sauce must be stored in the cool room after opening. They are no longer to be on tables.
12. With regards to keeping meals for residents in Jacaranda who may not be eating at the same time as the others. You can keep the food at 60 deg C or above and serve. Alternately get the kitchen to keep it hot and send up straight from the kitchen. The food must be however served within 30 minutes.
13. Eggs- the UPA standard is that eggs are to be cooked to 75 deg C or above. If you want a soft poached egg then you can record that the white has hardened then that would be ok.
