As the understanding of the freezing process and models available to describe the freezing process have advanced since the last review papers on prediction of freezing times Ramaswamy & Tung, 1984, Cleland et al., 1986 and Hung, 1990, this paper presents a critical review of the recent published literature on freezing time prediction methods. Models that take into account the simultaneous heat and mass transfer during freezing are considered and a brief overview on heat and mass transfer coefficients is also given.
