In two evaluation sessions performed within one week, the panelists received score cards with their descriptors and were asked to assess the muffins (five in each session). Muffin placement
in the booths was counterbalanced across the panelists using the latin square design, and the panelists were requested to proceed with their evaluation from the left to the right. Retasting was allowed (Delarue & Sieffermann, 2004). Using muffins from the replicate baking experiments, these sessions were repeated after 3 wks.
