Enzymatic process
Coconut oil is extracted from
coconut paste by a new enzymatic
process (1) and the method used less
energy than the conventional
processes. A Sri Lankan inventor (21)
has developed a simple method for
making high quality coconut oil and
desiccated coconut. Using more
manpower and little or no electricity,
it involves breaking the coconut,
scraping it and drying in a specially
designed solar drier. The desiccated
coconut produced can be used for
mechanical extraction of colourless,
odourless coconut oil suitable for
direct consumption (22). Mojika (23)
developed a simple process for
producing coconut oil and food grade
copra cake which has been patented.
Nambiar (24) developed a method for
the production of refined oil from the
milk of fresh ripe coconuts and has
been granted an Indian patent.
