The fresh Jerusalem artichoke (FJA) can be taken as a side dish with salty or spicy foods such as chili paste, a common household Thai food.
Therefore, Jerusalem artichoke could be an alternative health food in Thailand as well as other Asian countries.
However, a recommended daily intake of the FJA for increasing intestinal Bifidobacterium has not yet been established.
Therefore, this study focused on the bifidogenic effect of consuming the FJA.
In addition, oven-dried Jerusalem artichoke (OJA) intake was also carried out in order to test whether it still increased intestinal Bifidobacterium after preserved in this form.
