Phenolic compounds tend to accumulate in the dermal
tissues of plant body because of their potential role
in protection against ultraviolet radiations, to act as
attractants in fruit dispersal, and as defence chemicals
against pathogens and predators (Strack, 1997). In this
study, significantly (p < 0.05) higher levels of total phenolics
(both hydrophilic as well as lipophilic) and total flavonoids were detected in the skin of tomatoes (Table
2).
