3. Results and discussion
Table 1 shows content of total sugars, b-carotene, ascorbic acid and color values from different colors of mulberry fruits extracts.Purple-colored mulberry fruit extract contains the highest amount of total sugars compared to the purple-red- and red-colored mulberry fruit extract. However, red-colored fruits exhibit a significantly high amount of b-carotene and ascorbic acid compared to other colors of mulberry fruits. The color values of mulberry fruits from several batches did not show a significant variation (data not shown).
