Samples dispersions (6%, w/w, dry basis) were made with a certain ratio of sample and water and then determined by a Rapid Visco Analyzer (RVA-3D, Newport Scientific, Narrabeen, Australia). The temperature profile was: heat from ambient temperature to 50 °C (0–1 min); heat from 50 to 95 °C (1–4.45 min); hold at 95 °C (4.45–7.15 min); cool from 95 to 50 °C (7.15–11 min); and hold at 50 °C (11–13 min). Parameters including peak viscosity, viscosity at the end of 2.5 min at 95 °C or trough viscosity, final viscosity at the end of cooling, breakdown, setback, and pasting temperature were recorded. All tests were replicated three times.
