In this study, the scavenging ability of the extracts on ABTS free radical was shown in Fig. 4. Its scavenging powers correlated well with the increasing concentrations. The ABTS scavenging ability decreased in the following order: compound enzymes extracts > papain extracts > pectinase extracts > cellulase extracts > hot water extracts. These results suggested that thecompound enzymes extracts had the strongest scavenging powe ron ABTS radical in contrast to the weakest one of hot water extracts.Among the three single enzyme extracts, there were no significant differences (p > 0.05) upon ABTS radical scavenging ability.
