Panel participants were recruited from students, staff, and faculty in the Human Nutrition, Foods, and Exercise and the Food Science and Technology Departments at Virginia Tech. Participants ranged in age from 18 to 60; the panel was approximately two-thirds female. Most participants (57%) consumed at least one granola product per week as self-reported in the demographic questionnaire. Panelists, seated in isolated sensory booths under incandescent light evaluated two samples for each product (granola bars and cereals) following a balanced complete block design. Samples (5 g) were coded with 3- digit numbers and the order of the sample presentation was randomized. Panelists completed a demographic survey. Sensory Information Management System sensory software (SIMS 2000) (Sensory Computer Systems, Morristown, NJ, USA) was used to record the panelists’ acceptability responses and demographic information.
