4. Conclusion
The potential of using a traditional medicinal plant – blackberry
leaf, enhanced by the addition of plant derived sources of sweeteners
was evaluated. Considering the diversity of used plant derived
raw materials for the preparation of blackberry leaf mixtures, the
obtained formulations deliver significant biological activity and
antioxidant properties which may increase the daily intake of antioxidants
when implemented in herbal infusions. The use of dried
fruits, vegetables, stevia and liquorice root enhanced the polyphenolic
content and composition, as well as the content of some
macro and microelements in the formulated blackberry leaf mixtures.
Especially the content of phenolic acids, flavonoids and glycyrrhizic
acid derivatives were enhanced by the addition of natural
