3.1.3. Individual phenolic compounds and total antioxidant activity Table 3 shows the results of individual phenolic compounds in the wines samples and it can be observed that the wines showed high concentrations of hydroxybenzoic and hydroxycinnamic acids in relation to others studies (Marquez et al., 2012), mainly gallic,protocatechuic and trans-caftaric acid. The CSV30, CSV40, MV30 andMV40wines showed higher hydroxybenzoic acids compared to
the control wines. The total content of hydroxycinnamic acids showed higher values only for the MV30 and MV40 samples,
compared to the control wine. The content of phenolic acids is important in the composition of wines, mainly due to its ability to react with anthocyanins and stabilize the wine colour (FigueiredoGonz alez et al., 2013; Marquez et al., 2012).
