The use of ultrasound waves for pre-treatment plant tissue before drying process is applied in order to accelerate water removal process, thereby causes shortening a drying time and an
improvement of physical and chemical properties of raw material[12]. Fresh carrot were characterized by moisture content of 88.7 ± 0.59% and water activity of 0.986 ± 0.003. The carrot drying process was performed to the final water content around 0.22 kg H2O/kg d.m. and untreated sample was dried 257 ± 7 min.
