A freshly prepared stock solution of soymilk was diluted (35:65,
v/v) with a sodium acetate buffer (pH 5.4) containing pre-added
KCl (final concentration 0.6 mol/L). Three individual sub-experiments
were performed to test the influence of reaction conditions
on the enzyme activity and calcium release: (a) enzyme
concentration; (b) temperature; and (c) pH.
