Controlled atmosphere (CA) packaging is a process in which certain food is stored under a defined atmosphere that stays invariant over time. The atmosphere consists of nitrogen or carbon dioxide or a combination of the two and of oxygen, nitrogen, or carbon dioxide for nonrespiring and respiring foods, respectively. When combined with good temperature control and proper postharvest handling procedures, CA packaging can effectively extend the storage life of perishable foods, such as raw meats and fresh produce.
