Introduction
Soy sauce is a traditional condiment in the East and Southeast Asian cuisines that contributes a salty and savoury flavour.
Whilst soy sauce is traditionally produced and applied in liquid form, nowadays, powdered soy sauce is gaining more popularity in the food industry as an ingredient of soup mix, sauce mix and gravy mix for flavor enhancement (Hamano and Sugimoto 1978; Okayasu and Hamano. 2003).
Moreover, soy sauce in powdered form has the advantage of preservation of the naturally brewed soy sauce (Tamotsu. 1986). Therefore, the industry sees a great potential and motivation for producing soy sauce powders.
Soy sauce has a rich amount of simple sugars, amino acids, organic acids, etc.
They are produced by microorganism fermentation during the brewing process.
These small compounds can result in a high hygroscopicity and thermal plasticity of the dehydrated soy sauce (Hamano and Sugimoto 1978; Okayasu and Hamano 2003).
Since glass transition temperature is correlated to molecular weight, the method of adding high-molecular-weight carbohydrates such as maltodextrins has been widely used in spray drying food powders by reducing wall decomposition during processing and enhancing the stability of the powders during storage (Bhandari et al. 1993; Sablani et al. 2008; Cai and Corke 2000; Ersus and Yurdagel 2007; Tonon et al. 2009; Goula and Adamopoulos 2008, 2010).
Water activity has been coupled with glass transition temperature to provide an integrated approach to study the role of water in foods (Tonon et al. 2009; Kurozawa et al. 2009; Shrestha et al. 2007). The glass transition temperature, Tg, is defined as the temperature range in which material in a glassy state transfers into a super-cooled liquid or rubbery state, with a dramatic decrease in its viscosity (Liu et al. 2006).
Tg is thought to have a definitive effect on the caking or stickiness problem of amorphous food powders. Exposing to a temperature above the onset temperature of glass transition is thought to be the prerequisite for powder bridging, and the difference between a powder’s storage temperature and glass transition temperature, i.e. [T−Tg]+ represents the drive of caking (Aguilera et al. 1995; Fitzpatrick et al. 2007).
Food powders with Tg higher than their environmental temperature can be viewed as staying in a stable state. However, as water has a strong plasticizing effect, even a slight increase in moisture adsorption could significantly reduce Tg and cause degradative changes in the powder’s properties.
To determine the stability of an amorphous food powder, moisture adsorption profile and Tg as a function of water activity can be used to evaluate the critical storage conditions at a given temperature.
The objectives of this study were to spray dry soy sauce using a conventional drying aid maltodextrin and characterize the stability of the resultant soy sauce powders by moisture adsorption tests and glass transition analysis.
Sorption isotherms were modelled according to both the Brunauer–Emmett–Teller (BET) and Guggenheim–Anderson–de Boer (GAB) equations. The Gordon–Taylor equation was applied to model Tg changes with respect to the moisture content.
Based on the BET model and the Gordon–Taylor model, the critical storage conditions for the soy sauce powders were determined accordingly.
Future investigations should include the effects of salt concentrations on the physicochemical properties of soy sauce powders.
