The consistency coefficient of tamarind paste in this study was near by the result of (Chatchalermvit et al., 2005) of 19.12 Pa?sn at the same TS. However, this result was
different with the result of (Kongsoontornkijkul, 2005) because that might be the variation of tamarind paste.
