From an ecological point of view, the complete utilization of grapes including the grape pomace as byproduct from producing wine is an important aspect in waste reduction. Furthermore obtaining valuable products from grape skin and seeds – known for providing beneficial substances for lowering incidence of atherosclerosis and coronary heart diseases based on their typical fatty acid composition and their content of high valuable polyphenols – is a welcome side-effect (Peschel et al., 2006).
