"The banana variety Nanicao contains non-starch polysaccharides (NSP), such as galacturons, arabinoxylans, cellulose, and hemicellulose in its cell wall, similar to those found in cereals like oats. The extracted NSP can be used as an ingredient to promote prebiotic activity and help strengthen the immune system. The amount of extracted NSP varies depending on the level. Banana ripening and the accumulation of soluble sugars during banana ripening are considered obstacles to the purification of NSP. this experiment, two extraction methods were used: liquid-solid extraction (SLE) and ultrasonic extraction using ethanol as a solvent (UAE). And evaluate the efficiency of the dissolved sugar extraction process.
