Emulsion preparation
Oil-in-water emulsions were prepared as described in
Winkler-Moser and others (2014). Briefly, sodium caseinate (0.75%w/w) was stirred in water and this solution was refrigerated overnight. Emulsions (4 batches of 200 mL each) containing 10% w/w soybean oil in sodium caseinate solution were premixed using a Tekmar Ultra Turrax mixer (Cincinnati, Ohio, U.S.A ) for 2 min, and then further homogenized using a NS1001L PANDA 2K (GEA Niro Soavi, Parma, Italy).
