Chemical analysis in starch-molded mango snacks
Soluble dietary fiber (SDF), insoluble dietary fiber (IDF) and total dietary fiber (TDF) content
Results obtained on DF (soluble and insoluble) analyses are shown in Table5, indicating that the addition of dried ‘Ataulfo’ mango ingredients (DAMC and DAMB) increased the TDF content. Although, is note- worthy that control formulation, by itself, exhibited greater fiber content than other type of snacks that generally do not contain fiber, and showed more DF than other fiber-added products, such as some cereals (3.73 and 5.95 %) (Sangronis and Rebolledo 1993). This is because 30 % of the control formulation was ‘Ataulfo’ mango concentrate.
