The ferric thiocyanate method was used to determine the 170 C.-C. Lin, C.-S. Lin / Food Control 16 (2005) 169–175 peroxide content of the flesh. The TBARS content of the bonito homogenate was measured at 525 nm according to the method of McDonald and Hultin (1987). The TBARS value was expressed as nanomoles of malondialdehyde per gram of sample tested, using a molar extinction coefficient of 1.56 · 105 M1 cm1.
