② Liquid and solid wastes
1. A large volume of liquid waste is generated by using clean water to wash,
thaw, transport, cook, formulate, and/ or package seafood products
2. The major part of solid waste is from inedible parts of animals
- 25% fillets vs 75% waste material
3. Surimi processing generates a large volume of both liquid and solid waste(Fig. 3)
① Recoveries of surimi : 15-22%
② 78-85% of the whole fish is waste
③ Other significant wastes : skin and bone by mincing/deboning process(10-12%),
soluble proteins leached during washing process (17-20%), refining operation
(5-10%)
4. Shellfish processing also generates a considerable volume of waste : 75-83% of the
animal weight
5. Shrimp processing produces a large volume of wastes both as solids and liquids
