Effects of hydrothermal and fermentation treatments on
total, soluble and insoluble fiber of bran are given in Table 3.
In general, reducing bran particle size (alone or along with
hydrothermal or fermentation) decreased total, soluble and
insoluble fiber content of the samples. By reducing the particle
size from 1,200 μm to 90 μm (with no more treatment) about
54 % reduction in total, 35 % in soluble and 57 % in insoluble
fiber contents of the bran were determined.
