Introduction
Silk sericin is a kind of water-soluble globular protein derived from silkworm Bombyx mori, and represents a family of proteins whose molecular mass ranges from 10 to 310 kDa ( Wei, Li, & Xie, 2005). Sericin envelops the fibroin fiber with successive sticky layers that help in the formation of a cocoon, constitutes about 20–30% of the total cocoon weight ( Masahiro, Hideyuki, & Norihisa, 2000). Sericin consists of 18 kinds of amino acids most of which have strong polar side groups such as hydroxyl, carboxyl, and amino groups ( Wei et al., 2005). Sericin is especially rich in aspartic acid (∼19%) as well as serine (∼32%) ( Kwang et al., 2003), which has a high content of the hydroxyl group. The chemical characterization of sericin influences its many physical and biological properties.
