The objectives of this study were to determine (1) the composition and the concentrations of proanthocyanidins based on their degree of polymerisation in a red-bran rice cultivar, and the profiles of anthocyanins in purple-bran rice cultivars, and (2) the concentrations of total anthocyanins, proanthocyanidins, phenolics, and flavonoids that exist in the free and/or bound forms of whole grain rice of various bran colours, along with their antioxidant capacities using DPPH radical scavenging capacity, oxygen radical absorbance capacity (ORAC), and iron chelating capacity assays.
