2.2. Strawberry products
Frulact S.A., a Portuguese company producing fruit
jams, provided strawberry pulps and the other strawberry-
based products (strawberry topping, strawberry filling
and strawberry-apple sauce).
Pulps were collected immediately before industrial
pasteurisation and were transported under refrigerated
conditions to the University of Minho. Experiments
were conducted promptly in order to avoid microbiological
deterioration, which might affect the results mainly
due to the generation of carbon dioxide originating from
the product’s fermentation.
The pulp P1 used had an initial pH value of 4.0, a
Brix value of 14.58 and 2.5% (wyw) of starch content
while pulp P2 had an initial pH value of 4.0, a Brix
value of 26.58 and no starch. The other strawberry-based
products were used as commercialized.
