2.1. Materials
Commercial rice (Oryza sativa L.) flour was provided by Bangkok
Inter Food Co., Ltd. The rice flour was white powder with particle
size passed through 0.178 mm sieve opening. Defatted soy flour
(DSF) supplied by Thai Vegetable Oil PCL was ground by using a
Hammer Mill (Retsch, Germany) and a Centrifugal Mill ZM 100
(Retsch, Germany) and passed through 0.178 mm sieve size. The
modified starch (cross-linked cornstarch) Elastitex 3 was obtained
from National Starch and Chemical (Thailand) Co., Ltd. Commercial
pastas made from semolina (brands A and B, with diameter about
1.65e1.70 mm) were purchased at a supermarket in Bangkok.
