The TA was determined via titration with standardized 0.1 mol/L
NaOH set to reach pH 8.1 by an automatic potentiometric titrator (751
GPD titrino, Metrohm, Switzerland), according to the method reported
by Liu et al. (2010). TA was analyzed in triplicate and expressed as
malic acid equivalents as malic acid was the predominant acid in
mango as reported in our previous study (Liu, Fu, et al., 2012). The TA
of the samples was calculated using the following equation:
