rious water-soluble vitamins of the B complex led to satisfactory
levels of retention. It was observed that vitamin retention was
depended mainly on rice type and fortification method (p < 0.05).
The experiments show that the average retention of all vitamins
in dried rice using spraying as well as soaking was above 53%. The
vitamin retention in fortified rice was depended mainly on vitamin and method and secondly on rice type and on interrelation of
method-rice (p < 0.05).
