5. ConclusionIn this work we showed that tomato cv. “Micro-Tom” fruit is tol-erant to postharvest chilling under conditions that other varietiesdo not (4◦C during 4 weeks) despite relatively weak alterations inthe final quality of the red fruit. Furthermore, we demonstratedthat the ripening stage determination by external visual appre-ciation is reliable through quantitative measurements of color.Therefore, these results show that tomato cv. “Micro-Tom” fruit is agood model system to study the mechanism of postharvest chillingresponse and tolerance in tomato.
