Microbiological counts were performed in the cheese-like
sample with 5 g/L of SPC, with and without preservative (potassium
sorbate), during storage. Populations of Coliforms were
enumerated on Bile Red Violet Agar ; the plates were incubated
for 24 h at 32 C. Moulds and yeasts were developed on yeast extracdextrose
(glucose)-cloramphenicol agar(YGCA) at 25 C for 5
days
