In many studies, the change in the moisture ratio over time is
expressed by using empirical equations. For carrot, the expression
derived from empirical equations has been documented by the
present and other researchers. In many studies of carrot, the fitting
results derived from Page's model provided good agreement with
the experimental data (Reyes et al., 2008; Tatemoto and
Michikoshi, 2014; Zielinska and Markowski, 2010). Therefore, in
the present study, Page's model (shown below) was used to express
