GHI,Na2CO3 SRC, WSRC, water absorption, coarser particles and DDT,
which were closely located, indicated that the: (i) cultivars with
higher GHI produced flours with greater proportion of coarse particle
and higher damaged starch, and resulted into higher water
absorption; (ii) flours with a higher proportion of coarser particles
had a higher DDT due to the smaller water absorption rate.
