The main motivation for electronic noses is the development of the qualitative, low-cost, real-time, and portable methods to perform reliable, objective, and reproducible measures of volatile compounds and odors [5], [6], [16]. However, still, the real problem is the stability of operation at changing environmental conditions, as well as the sensitivity of the electronic nose to small changes in smell, particularly if two smells are very close to each other. This is an important problem at the forgery of coffee. Adding small amount of low-quality grains to high-quality ones does not change the smell significantly,and therefore, it is very difficult to discover. For some dishonest group of people involved in such forgery, it is quite an important source of profit.
