2.4.3. Assessment of melanosis
A trained panel of four experienced judges assessed the
melanosis of the treated-GRS samples. After general inspection of
packaged samples, the shrimp were removed from each pack,
thawed at ambient temperature and immediately presented to
all panellists at the same time. Melanosis assessment involved a
five-point descriptive scale where 0 indicated either natural or
absence of discolouration, 1 indicated yellowing whereas 2, 3,
and 4 respectively indicated slight, moderate and intense black
spotting (Bono et al., 2012).
