Experiment 1 was on the effects of temperature during
soaking and germination of brown rice on GABA production.
The treatments included three soaking temperatures of 25, 30
and 35 °C, five germination temperatures of 20, 25, 30, 35 and
40 °C, for both cultivars. Thirty treatments were randomized
with three replicates. For each replicate 250 seeds of brown rice
of each treatment were put into Erlenmeyer flasks to soak in
deionized water for 24 h, and then placed on eight layers of
common cotton gauzes in a large Petri dish (15 cm diameter
× 3 cm height) to germinate for 48 h. Seeds in Petri dishes
were sprayed with deionized water every 12 h. Samples were
taken every 6 h and put in liquid nitrogen at once for 5 min,
subsequently pulverized with a mortar and pestle, packed in
plastic bags made of linear low-density polyethylene,
which kept samples dry.The samples were stored at −40 °C until
