Soluble sugar, total acidity and vitamin C (VC) were measured in
the homogenized juice (Niu, 1990). Soluble sugar content and total
acidity were analyzed using cyanide-iodometry and neutralization
titration method, respectively. Vitamin C (VC) was extracted using
oxalic acid-EDTA and analyzed using metaphosphate colorimetry.
Sugar/acid ratio was defined as the ratio of soluble sugar content
and total acidity.
