The heat stability of betalains was measured after treatment in
a thermostatically controlled bath at 90 ◦C. The samples were held
at this temperature for specific times and then cooled immediately
in an ice bath. Subsequently the absorption spectra of the solutions
were recorded. Three replications of each experiment were carried
out and the mean value and the standard deviations are shown.
