The quality characteristics of passion fruit peel pectin extracted
at pH 2.5 revealed that the pectin has a methoxyl content of 9.61 g
per 100 g and an equivalent weight of 805, which was found to the
highest among the different extraction conditions studied. Both
methoxyl content and equivalent weight decreased with
decreasing pH of extracting medium which could be due to partial
degradation of pectin (Table 3). It may be concluded that the
maximum yield of pectin can be obtained at pH 2.0 using hydrochloric
acid.
