Water activity (a_w) of osmotic dehydrated purple sweet potato that infused with CaCl2 shown in Figure 2. a_w of purple sweet potatoes was decreased in the samples during storage at both temperature. a_w shown no significant after different temperature storage in potatoes. a_w of purple sweet potatoes that were undergone for osmotic process lowest (0.9500) and highest (0.9343) was found in the potato samples storage at room temperature (10 day). The samples stored at room temperature was losing a_w more quickly than 4˚C. Osmotically Dehydrated purple sweet potatoes could able withstand for 25 days under low-temperature storage. Whereas, room temperature storage was not successful on extending the shelf life (10 days) of potatoes due to microbial growth.
