Methanol and ethanol extracts showed antioxidant potency in a descending order when added to soybean oil. The protective effect of the S. hortensis extracts was comparable with widely used syn-thetic antioxidant BHT. Thus, methanol and ethanol ex-tracts of S. hortensis could be prepared and added to the commercial vegetable oils as natural antioxidant and suita-ble alternative for some synthetic antioxidants.
