A 5 g portion of minced stuffing sample was transferred to 50-ml
centrifuge tube and homogenised with 20 ml of 6% TCA for 3 min in
duplicate for each storage condition. The homogenate was centrifuged
at 10,000 g for 10 min (4 C) (Hitachi, SCR20B), and filtered
through Whatman No. 2 filter paper (Whatman, Maldstone, England).
The sample filtrate was then placed in volumetric flask, and
TCA was added to a final volume of 50 ml.
