2. Materials and methods
2.1. Materials
Whole red cabbages (RC) and sour cherry pomace (SCP) were used as raw material. The red cabbages were obtained from Bafra-Samsun/TURKEY and sour cherry pomace was purchased from
Dimes Concentrated Fruit Juice Company (Tokat, TURKEY). They were stored at þ1 C maximum for 48 h before processing.
