The speed centrifugation was set at 4600 rpm, according to the results obtained in our laboratory (petzold & aguilera,2013).centrifugation time was determined from initial trials with blueberry juice (first cycle of cryoconcentration).From fig 3a it can be seen that Fig.3 assays for determintion of centrifugation time. using blueberry juice previously frozen, removing the frozen and concentrated fractions at different centrifugation times (first cycle of cryocnoncentration) progressively increases efficiency up to a plateau value (about 60%),so 10 min are considered appropriate.similaely,fig.3d shows 0.6 kg solute per ka of initial solute considered sufficient for freeze concentration.
