Overall, the results suggested that the more pseudoplatic the product, i.e. the lower the n values or the higher the fat contents, the less effect of temperature on the viscosity (Saravacos, 1970). The magnitude of the value of the flow behavior index (n) was between 0.739 and 0.916. These values are in accordance with those reported by Vitali et al. (1985). For coconut milk having similar characteristics, they found that the samples exhibited mildly shear-thinning fluids with magnitude of n between 0.76 and 0.94.
