In general, nitrous acid is generated from the decomposition of nitrite under acidic condition,
and this continuous reaction finally form nitrous acid and nitric acid (Honikel, 2008).
Thus, it was assumed that WFC could impact on a process of nitrite dissolution which might be associated with the increased MbFe3+ content but the decreased MbFe2+ and MbFe2+O2 in meat batter with nitrite.
