Table 1 presents the volatile compounds (represented by arbitrary area units (AAU) × 103) detected in the headspace of fresh (untreated samples) and processed (samples subjected to different HPT treatments) human milk samples. A total of 50 volatile compounds detected in human milk were classified by chemical families: 20 hydrocarbons (aliphatic and aromatic), 5 carboxylic acids, 8 aldehydes, 5 ketones, 7 furans and pyrans, 4 alcohols, and other volatile compound which cannot be included in the previous chemical groups (1 volatile compound).
