In this research, a new amylase type time–temperature
indicator was invented, which was based on the reaction
between amylase and starch. This new type of TTI was
studied under constant temperature and the dynamics
parameters were analyzed by SAS software to fix a mathematical
model, which could reflect the relationship between
color response value and time and temperature. This new
time–temperature indicator made by amylase and starch
is low cost and is suitable for commercial use.
